Spur Tree Curried Chicken And Potatoes

INGREDIENTS:
  • Chicken thighs – 2 lbs (marinated in Spur Tree Curry Marinade per instructions on the container)
  • Red skin potatoes (cut into wedges) – 2 lbs
  • Spanish onion (coarsely chopped) – 1 large
  • Olive oil – 2 tbl
  • Spur Tree Curry Marinade – 2 tbl + 2 tbl
  • Coconut milk – 1 -12 oz can
  • Chicken broth – 16 oz
  • Green bell pepper (1/4” diced) – 1 large
DIRECTIONS:

In a large heavy Dutch oven, heat the olive oil over medium high heat. Add chopped onion and cook until tender (do not brown). Add the first two table spoons of Spur Tree Curry Marinade and stir well to incorporate the marinade into the oil and onion mixture. Add the pre- marinated chicken. Sear the chicken on both sides. Add potatoes. Stir well to coat.
As the potatoes begin to cook, add the second 2 table spoons of Spur Tree Curry Marinade. Work the marinade into the dish. Once the marinade is incorporated, add the chicken stock. Stir to evenly incorporate the ingredients.
Bring to the boil. Once the product has reached the boil, lower the heat to a medium simmer and cover.
Simmer the dish for thirty minutes. Add the coconut milk and continue cooking uncovered over medium heat for ten minutes. Plate the curried chicken and potatoes, garnish with the diced green pepper and serve immediately.
