Mashed Potato
INGREDIENTS:
- 2 pounds of potatoes, either starchy, waxy or a mix of both
- 1 teaspoon salt
- ΒΌ teaspoon fresh grated ginger
- 2 teaspoon scallion fine-chopped
- 6-8 tablespoons (3-4 ounces) unsalted butter
- 1 cup half and half cream (or single)
- freshly ground black or white pepper, to taste
DIRECTIONS:
Cook the potatoes until fork tender.
Mash with salt, butter, ginger & chopped scallion and cream.
Season with freshly ground pepper
