Mashed Potato


  • 2 pounds of potatoes, either starchy, waxy or a mix of both
  • 1 teaspoon salt
  • ΒΌ teaspoon fresh grated ginger
  • 2 teaspoon scallion fine-chopped
  • 6-8 tablespoons (3-4 ounces) unsalted butter
  • 1 cup half and half cream (or single)
  • freshly ground black or white pepper, to taste

Cook the potatoes until fork tender.
Mash with salt, butter, ginger & chopped scallion and cream.
Season with freshly ground pepper
