Curry Chicken Seasoned Rice


1½ lb rice

4oz saltfish

8oz mixed vegetables (frozen or canned and drained)

1oz butter

3 cups coconut milk

1 cup water

1½ oz Spur Tree Curry Seasoning (for rice)

1 lb chicken tenders or breast

2oz Spur Tree Curry Seasoning (for chicken)2 tsp salt



1. Soak saltfish in water for 30 minutes, drain, remove bones and flake.

2. Season chicken with 2oz Spur Tree Curry Seasoning and marinate for 30 minutes.

3. Heat butter in pot, add remaining Spur Tree Curry Seasoning and cook for 2 minutes.

4. Add marinated chicken, and brown evenly for a few minutes.

5. Combine coconut milk, salt, and water and pour on chicken.

6. Wash rice, drain and add to pot, stirring well.

7. Add flaked codfish to rice, stir well, and cook for 15 minutes.

8. Add mixed vegetables, fluff rice and allow to steam for another 5 minutes
