Brown Stew Fish
Ingredients:
- 3lbs fish fillets, 2 onions, sliced ,3 scallions – chopped
- 3 cloves garlic, minced
- 1 green pepper, chopped , ½ tsp ground pimento (allspice) ,3 tomatoes, chopped ,1 sprig fresh thyme
- 2 cups water ,Spur Tree Crushed Scotch Bonnet Pepper Sauce – to taste, 1 tbsp soy sauce ,½ tsp browning ,seasoning salt , black pepper
Directions:
- Clean and rinse fish well water and lime juice. Pat dry and season with seasoning salt and black pepper.
- Set aside and marinate for 2-3 hours. Heat oil in large skillet over medium heat.
- Add fish to skillet and brown on both sides. Remove the fish and carefully pour off excess oil. Return skillet to stove top, reduce heat to medium.
- Cook onions, garlic, tomatoes, Spur Tree Crushed Scotch Bonnet Pepper Sauce and thyme for 5-6 minutes and remaining ingredients and stir.
- Raise heat to high and bring to a boil. Reduce heat to low and add the fish.
- Pour sauce over fish and cook till sauce is thickened.
