Brown Stew Fish


  • 3lbs fish fillets, 2 onions, sliced ,3 scallions – chopped
  • 3 cloves garlic, minced
  • 1 green pepper, chopped , ½ tsp ground pimento (allspice) ,3 tomatoes, chopped ,1 sprig fresh thyme
  • 2 cups water ,Spur Tree Crushed Scotch Bonnet Pepper Sauce – to taste, 1 tbsp soy sauce ,½ tsp browning ,seasoning salt , black pepper


  1.  Clean and rinse fish well water and lime juice. Pat dry and season with seasoning salt and black pepper.
  2.  Set aside and marinate for 2-3 hours. Heat oil in large skillet over medium heat.
  3.  Add fish to skillet and brown on both sides. Remove the fish and carefully pour off excess oil. Return skillet to stove top, reduce heat to medium.
  4.  Cook onions, garlic, tomatoes, Spur Tree Crushed Scotch Bonnet Pepper Sauce and thyme for 5-6 minutes and remaining ingredients and stir.
  5.  Raise heat to high and bring to a boil. Reduce heat to low and add the fish.
  6.  Pour sauce over fish and cook till sauce is thickened.
