To make a great jerk pork, use boneless pork butt, butterflied to 1″ to 1.5″ average thickness. cook on a low heat on a BBQ grill or in a¬†oven at 325F (Put shallow pan of water on bottom rack) until fully cooked turning as required. Cut in 1″ cubes when rested and serve with hard-dough bread
