Oxtail Stew

Ingredients:

  • 2 ½ lb oxtail, cut up
  • 4 tbsp Spur Tree Oxtail Seasoning
  • 2 tbsp cooking oil
  • 4 carrots, peeled and sliced (optional)
  • 1 pint (16fl.oz.) hot water
  • 1 can butter beans

Directions:

  1. Season oxtail with Spur Tree Oxtail Seasoning and marinate for 2 – 4 hours in refrigerator.
  2. Heat oil in heavy skillet and brown oxtail on both sides.
  3.  Add carrots and hot water, bring to boil, reduce heat, cover and simmer gently for 3 ½ hours or until oxtail is almost tender.
  4. At this stage add more liquid if necessary and check seasoning.
  5.  Cover and simmer for 20 – 30 minutes, add butter beans (drained) and allow to simmer for 3 to 4 minutes.
  6.  Serve with traditional Jamaican rice and peas
