Fricassee Chicken

Ingredients:

  • 3lb chicken, cut into 8 pieces
  • 2 large onions – coarsely chopped
  • ¼ tsp ground ginger
  • 3 medium tomatoes – coarsely chopped
  • ½ tsp ground pimento (allspice)
  • 2 cloves garlic, chopped finely
  • 1 large onion, sliced
  • Spur Tree Scotch Bonnet Pepper Sauce
  • 3 sprigs thyme, Black pepper and salt to taste

Directions:

  1. Season chicken with sliced onion, thyme, salt, pepper, ground ginger, and pimento (allspice).
  2. Cover and refrigerate for several hours or overnight.
  3. Heat oil in a heavy skillet, and brown chicken on moderate heat for 20 – 25 minutes.
  4. Lower heat, and add chopped onions, tomatoes, garlic, salt, and a generous splash of Spur tree Scotch Bonnet Pepper Sauce to taste
  5. Cover and simmer for 10 – 15 minutes, adding water as necessary.

COOKING TIME: 45 minutes
