Devilled Eggs with Pepper Jelly

Ingredients:

  • 8 extra large eggs, hard boiled
  • ½ cup sour cream
  • 2oz cream cheese
  • 2 tbsp mixed minced scallion (green onions) plus extra for garnish
  • 2 tbsp mayonnaise
  • 4 oz smoked salmon, minced
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 oz Spur Tree Pepper Jelly

Directions:

  1.  Allow eggs to cool, then peel and halve lengthwise. Gently remove the yolks, place in mixer bowl, add sour cream, cream cheese, mayonnaise, lemon juice, scallion, salmon, salt and pepper.
  2.  Beat, with paddle attachment on medium speed until fluffy.
  3. Fill egg whites with yolk mixture, using small spoon, sprinkle with salt and pepper, cover loosely with plastic wrap and refrigerate for 30 mins.
    To serve:
  4. Garnish generously with Spur Tree Pepper Jelly and a little scallion
